Instructions:

  1. Place first four ingredients in a food processor and blend to a paste.  Set aside.  Process the pecans, Brazil nuts, coconut, cinnamon and salt in a food processor until coarsely ground.  Add dates (or prunes) one at a time and process until the mixture starts to stick together.

  2. Place unbleached muffin liners into a standard muffin pan.  Add ¼ cup of the base/topping mixture to 12 muffin cups, then a layer of 2 TBSP filling and then top with the remaining base/topping.  Freeze until ready to eat.  Store in an airtight container & these should be delicious for a week!
